Course Introduction
In the UK, food allergens and the risks they pose have become a major public health concern. With increasing cases of food hypersensitivities and stricter laws like Natasha’s Law, allergen management has gained critical importance. Greater emphasis is now placed on educating food business operators and consumers about allergen dangers, proper labelling, preventing cross-contamination, and ensuring clear communication to enhance food safety and minimise the risk of accidental exposure.
This course provides an overview of food hypersensitivity and key allergen legislation. It outlines strategies for managing allergens at every stage, from menu planning to end-of-service cleaning, and applies these practices across various settings.

- Review a case study to understand the risks allergens can pose

- Review anaphylaxis and the risk it poses

- Review the common food intolerances that people have
- Explore Coeliac disease, its symptoms and severity and how it affects people
- Work through a case study to help embed learning
- Identify the legislation in place to help protect consumers with allergens – Food Safety Act 1990 (as amended), Food Hygiene (England) Regulations 2013 (and equivalents), Food Information for Consumers (FIC) Regulation 2014 (EU 1169/2011)
- Establish your current understanding of legislation
- Explain how allergen information should be presented in person
- Identify how allergen information should be presented when distance selling
- Explain allergen disclosure requirements for both pre-packed and non-pre-packed food
- Work through a case study to help embed learning
- Test learners understanding of Natasha’s Law
- Identify how to communicate the risk of cross-contamination
